Recently, there have been a lot of articles on food that we consider healthy but in reality, it is rather shit.

And so, I have stumbled upon this really healthy but more importantly tasty and crunchy banana granola recipe, and trust, it is worth to give it a try. The geniality of this recipe lays in using ripe bananas as a sweater as well as a "glue".
Okay, forget what I have written about this recipe as being super healthy... The THING is that it us really yummy and the healthy factor is just an added bonus.

We will need:500 g rolled oats (2 cups)
80 g pumpkin seeds (1/2 cup - I have used sunflower seeds)
80 g chopped almonds (1/2 cup)
2 really ripe bananas
1/4 teaspoon vanilla extract
3 tablespoons honey/agave syrup/maple syrup
3 tablespoons coconut oil (at room temperature)
a little bit of salt

1. Preheat your oven at 200°C/400°F, prepare your baking pan - line it with a parchment paper (and you will save yourself a lot of troubles).
2. Mash your bananas, add wet ingredients (honey/syrup, vanilla extract, oil) into the banana batter.
3. Mix oats, seeds, almonds and salt in another bowl. Add the wet ingredients into this mixture,combine well - use your hands and have some fun :)
4. Spread the granola in an even layer on the parchment paper. Bake for 20 minutes. Take out the batter from the oven after 10 minutes and mix/break the granola with a wooden spoon. Let bake for another 10 minutes. After the granola is baked, I recommend mixing it once again with the wooden spoon and let it dry a little bit in a cooling oven.
TIP: You may add dried fruits (like raisins) into the granola but do that only AFTER baking. Otherwise, your dried fruit will be super dried.
Store in an air-tight container and use within a month.
