Yet another great recipe by Nigella Lawson. And once again it is super easy to make. I think that the simplicity of the Nigella's recipes combined such a tasty results is what draws me to her :) For example, in this case, the bread is very moist and the longer you let it sit, the better it gets. I do not want to exaggerate but I think this is the best cake dough I have ever eaten. Just look at the ingredients list: banana, coconut, butter - all my favourites.
Nigella use the dried cherries which I didn't have the second time I baked this, thus I replaced cherries by dried apricots. And I have to say, it tasted better, The apricots combined with coconut make really interesting and exotic combination.

125 g melted butter (9 tablespoons)
4 really well ripe bananas
150 g caster sugar (3/4 cup)
2 eggs
175 g all purpose flour (1 and 1/4 cups)
100 g shredded coconut (1 cup)
100 g dried cherries (or apricots) (2/3 cups)
2 teaspoons of baking powder
1/2 teaspoons soda bicarbonate

METHOD:
1. Preheat the oven to 170°C/325°F, prepare your pan for sweet breads (as always, spread a thin layer of batter and sift a little but of shredded coconut, or just line it with a parchment paper). Puree your bananas, and cut the cherries/apricots.
2. Combine the flour, soda bicarbonate and baking powder.
3. In another bowl, combine butter, sugar, then add eggs, one after another. Then add chopped fruits and finally, mix in 1/3 of the flour with the baking powder and soda bicarbonate until duly combined. Then add another 13 of the flour etc., mix in, and then add the remaining part of the flour.
4. Pour the batter into the pan and bake at 170°C for about 1 hour and 15 minutes. When you think, it is baked, perform the toothpick test (poke the toothpick(fork into the center of the cake, taoke it out after 10 seconds, if the toothpick is clean, your cake is baked).
5. Le it cool for 5 minutes in the pan, then take it out from the pan and let it cool on the wire rack.

The bread batter is absolutely delicious, not dry at all. Really great combination of already tasty things.
